Vegetarian recipes can easily be converted for vegans and can also be gluten and sugar free as well as a healthy meal for omnivores. Vegetarians and vegans should remember plant proteins are in complete and two need to be combined in the meal to make it complete. Omnivores benefit from having 3 plant-based meal days each week. Easy and tasty, this recipe made a satisfying main dinner meal and good lunch leftovers served cold. Normally I am not a fan of tofu, but had heaps left over from a vegetarian dinner party dish, which was not bad either served with another veggie stir fry, see recipe links below, enjoy.

Choose organic tofu, when not labelled organic it has come from GMO crops and can contribute to estrogen dominance when eaten regularly. Try whatever vegetables you have on hand, I used green beans, snow peas, shredded cabbage and shredded carrot combination. Most vegetables will work with this recipe as the sauce brings it all together.

Vegetarian Recipe with Absolique Trichologist – Honey, Ginger, Tofu and Veggie Stir Fry:

  • Stir fry; 1 1/2 cup uncooked brown rice or farro, coconut oil for cooking, @ 4oog extra firm tofu, 2 cups chopped asparagus, 2 cups shredded carrots, 3 green onions chopped
  • Sauce; 3 cloves garlic, 2 tablespoons fresh ginger, 2 tablespoons honey, 1/2 cup low sodium soy sauce, 1/4 cup water, 1/4 cup rice wine vinegar

Method – Sauce: Puree all the sauce ingredients together until combined and leave aside for later. Cook the rice or farro according to package directions. Prepare tofu into slices and press with a paper towel to remove excess moisture, wait a few minutes and press again as there’s lots a water in there. Now cut tofu slices into small cubes. Heat coconut oil in a large pan or wok over medium heat. Add tofu and 1/4 cup of the stir fry sauce, watch out for spatters. Stir fry the tofu until golden and drain on paper towels. Return the pan to the heat and add vegetables with 1/4 cup sauce, cook until crisp. Arrange vegetables and tofu over the cooked rice or farro, and cover with more sauce and sprinkle with green onions to serve.

For gluten free, make sure your soy sauce and your tofu are both certified gluten free. For vegan, use an alternative sweetener in place of honey. You can sprinkle tofu with the tiniest amount of chili powder in the pan to bump up the golden colour. Option to peel the carrots into long strips instead of grating and for a sugar free version of this recipe, use white distilled vinegar or other vinegar. You need to combine 2 non-heme proteins in a meal to form complete proteins required to provide the body with iron and ferritin the iron store needed for normal hair growth.
